COLD AND HOT COCKTAIL MENU WITH STATIONS

 

If you are planning a thematic event or a large reception, Robert Alexis Caterer creates and puts at your disposal a menu concept, combining stations or party tables, as well as finger food, mostly inspired by continental cuisine.

 

 

BOUCHÉES

Goat cheese and basil topped with candied tomato
Slice of beef steak rolled with Arugula and Reggiano
Shrimp in a two lemon marinade, coriander sauce
Foie Gras, prosciutto and fig chutney on a canapé       

Wild mushrooms in Polenta with melted cheddar cheese
Won Ton vermicelli shrimp, honeyed pepper sauce
Spiced lamb cigar, Moroccan style
Brie and pecan croustade with caramelized Whisky

 

CHOICE OF STATIONS

Middle East station

Kébbé, Falafel, stuffed vine leaf, lemon flavoured chicken kebab, spiced beef fillet kebab,
Fattouche and Taboulé salads, Hommos (chickpeas purée), Baba Gannouj (eggplant purée)

 

Valencia’s Paella Station

Served on a large Paella tray, garnished with a mixed grill of farm chicken, chorizo sausage and shrimps

 

Canadian Atlantic salmon Station

Served smoked, homemade Gravlax and Tartar, with cream cheese, caper, onion and lemon

 

French Raclette cheese Station

Served entirely under grill, with Westphalian ham, sausage,
celeriac in rémoulade, red beet salad, potato and pickle

 

Pasta Station

Penne and mini ravioli stuffed with spinach and cheese, served with Arrabiata sauce and creamy sauce,
and your choice of shrimp, caper, olives, pepper, tomato, shallot and basil

 

Fine cheeses and exotic fruits Station

A choice of gourmet Quebec country cheeses, served with exotic fruits, figs jam and roasted nuts

 

Roasting Station

AAA Roasted Rib eye, braised pork loin and Montreal Smoked Meat, sliced and served
with mint jelly, caramelized onions, preserved vegetables and condiments

 

Crêpe Suzette Station

Fine Crêpes stuffed with confectioner custard, Grand Marnier flambé in front of guests,
served with a choice of chocolate sauce just warm

 

Chocolate Station

Chocolate fountain served with fresh fruit bouchées
